Kombucha, a drink made by fermenting tea and sugar with the kombucha culture, is a living drink in which there is the perfect combination of micro-organisms, lactic acid, vitamins, enzymes and other bioactive substances. Due to the acidic fermentation process used in its brewing, kombucha contains ethyl alcohol in very minimal amounts. Kombucha lives in symbiosis with our body, which means that it is immediately recognised, accepted, and utilised by the digestive system. When the appropriate mix of micro-organisms are found in digestive system, they can work effectively in the breaking down of foods, and the flushing out of toxins. Proper digestion may help in preventing candidiasis, which is an epidemic of our age, allowing for our immune system to take on less load.
